Aunt Iris's Belgian Brisket of Beef

Favorite Family Dish.
Ingredients
5 pound brisket
2 teaspoons of salt
1/2 teaspoon of pepper
2 onions sliced
1/4 cup of water
4 celery stalks
1 cup of heinz chili sauce
1 can of beer
Cooking Instructions
Place beef, fat side up, in roaster and season. Cover this with onions, celery stalks and chili sauce. Add 1/4 cup of water. Allow 1 hour per pound for roasting in a 325 degree oven, in uncovered roasting pan. Baste often with drippings until meat becomes well browned. then cover. After beef is baked 3 1/2 hours, pour the beer over it and re-cover. Bake 1 1/2 hours longer, or until tender. Remove meat and cool. Strain graving into a bowl and let stand. AS fat rises, skim off as m uch of it as possible. Slice meat and reheat in skimmed gravy, adding about 1/2 cup of water, if necessary. Serves 6 to 8 people. Preparation may be made in advance.
