Blaire's Favorite Sliced Potatoes

Blaire is allergic to all dairy products, so this recipe is modified for her.

Ingredients

3 large Russet Potatoes, peeled and cut horizontally in 1/3 inch slices
One large Vidalia Onion cut horizontally in 1/3 inch slices
Pam Cooking Spray
Smart Balance Margarine without Dairy Products
Salt and Pepper

Cooking Instructions

Heat oven to 350 degrees, use large baking pan about 2 inches deep. Spray bottom of the pan with Pam. Place one layer of potatoes in pan, salt pepper, spray with Pam and put small pats of margarine on some of the potatoes. Cover the potatoes with a nice layer of onions. Place the second layer of potatoes over the onions. Again spray with Pam, salt, pepper and use pats of margarine. Place in the oven covered with foil for one hour. Remove foil and brown the top layer of potatoes on Broil for a few minutes. Enjoy!!
